Jonathan Didier Pabiot

Young Jonathan-Didier Pabiot successfully persuaded his father Didier to convert the family vineyards to organic viticulture. Today, Pabiot is one of three certified-organic domaines and the first Demeter certified (biodynamic) domaine in the appellation.

The family’s 20 hectares of vibrant, lush and healthy vineyards span three primary soils – Kimmeridgian marl, chalky Portlandian, and clay-silex on flint – which serve as the bedrocks of our three primary bottlings: Elisa (formerly Prélude), Léon (formerly Florilège), and Prédilection, an impressive old vine cuvée grown on terre blanche terraces overlooking the Loire River.

Slow, cool indigenous yeast fermentations, minimal SO2 doses, and ageing on the lees for 5-12 months result in expressive, transparent Puilly-Fumés that are turning heads in the Loire and beyond!
